Etcetera. Etcetera. Etcetera.
A recent Cruz through HTX interview with Houston restauranteur Sylvia Casares reminded me of the “ready, fire, aim” mentality.
That’s because she left her job as a food scientist at Uncle Ben’s to open her own restaurant, Sylvia’s Enchilada Kitchen. While she had no previous restaurant business, she had a plan of attack and the result is an enchilada empire that includes a cookbook, classes, a Food Network appearance, nationwide coverage, and an upcoming line of sauce.
Her success also reminds me of two friends of mine, Dorothy Gibbons, who co-founded The Rose Breast Center of Excellence in 1986, when women’s healthcare was less than stellar; and Raul Moreno, who started his podcast empire with gear he borrowed from a friend and used to record episodes in his closet.
Just like Sylvia, Dorothy and Raul dared to dream and dared to act on their desire to make an impact.
Today, The Rose serves thousands of Texans across forty-three counties. And Charlie Mike: The Podcast inspires veterans and first responders across the Houston area and beyond.
So here’s to those who dare to build empires, create impact, and make a dent in this vast universe. To those who dared to start in the first damn place.
